Abstract
Most people are familiar with chocolate, some are addicted, many have a favourite kind, and together they spend over £4 billion per year in the UK consuming over 11 kg per person. Few spend much time thinking about the science behind chocolate, yet it encompasses a rich breadth of chemistry, materials science and engineering.
This presentation will unpack the dark art that is chocolate making, highlighting some of the finer points of chemistry involved, and naturally will involve some practical demonstrations.
