DESCRIPTION:Active and biological matter are characterized by the violatio
 n of time-reversal symmetry (TRS) at the microscopic scale. For example\, 
 while a cell can divide into two daughter cells\, the reverse process&mdas
 h\;two cells merging into one&mdash\;is statistically impossible. This inh
 erently time-asymmetric stochastic behaviour results in an infinite rate o
 f entropy production. In this talk\, I will introduce a general formalism 
 to calculate the entropy production of birth-and-death processes at all le
 vels of coarse-graining. Using this formalism\, we will address and tame t
