DESCRIPTION:Quantum simulators are artificial and highly controllable quan
 tum systems mimicking and simulating the complex behaviour of real materia
 ls. The talk will start by a review of our founding results on the simulat
 ions of Mott to superfluid phase transitions in coupled cavities doped wit
 h two level systems and the applications in measurements based quantum com
 putation. Photonic simulation of quantum spin models\, Fractional Hall eff
 ect\, and many-body entanglement in dissipative cavity arrays will be intr
 oduced. Our recent results on the simulation of spin-charge separation usi
 ng photons will be discussed throughout the remaining part of the talk. If
  time permits\, our ongoing work towards the realization of the sine-Gordo
 n model and the "pinning transition" in a nonlinear fibre will be presente
 d.
